This bread is a favorite at our house. It is quick to bake up and can be made a few different ways for some variety.
My mom gave me this recipe and it is the same one I had as a kid when I would go to school. It is great for a large family because it is made in a half sheet pan rather than a 9×13.
Sometimes I like to sprinkle chocolate chips on the top before baking, other times I put some nuts in while mixing, but most of the time I just make it as is and the kids (and hubby) gobble it down.
This is a yummy fall (or any time of the year) snack. Or, add some cream cheese frosting and you have a great dessert! This recipe is made large family style by using a half sheet pan to cook it.
- 3.5 cups of flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 cup oil
- 2/3 cup water
- 1 cup nuts optional
- 2 cups sugar
- 1 tsp nutmeg
- 4 eggs
- 2 cups pumpkin puree
Blend the eggs, oil and sugar in mixer. Add baking soda, cinnamon, nutmeg. Add water. Slowly add flour, then add in the pumpkin and nuts if desired. Mix until well blended. Spray a half sheet pan with cooking spray. Pour batter into pan (sprinkle chocolate chips on top if desired) and bake in a preheated oven at 350 degrees for 20-30 minutes.
