Over Thanksgiving, we kind of fell of the wagon with our THM eating plan….well, not kinda, we did.
So I am trying to get back into the groove of eating the THM way and thought I would share some of our favorite recipes to inspire myself.
For breakfast, my favorite recipe so far, it the banana oat shake out of the cookbook. Since the recipe comes from the book, I can’t share it here, but if you have a cookbook, I suggest you give it a try.
Another favorite breakfast of ours is scrambled eggs with cheese and spinach. Simply and yummy!
For dinner, something we really enjoy is the Cream Cheese Crockpot Chicken. I think its called Cajun Chicken in the cookbook. I make it the way they describe in the cookbook only without the cajun seasoning, I just add salt and pepper. Served with some noodles and broccoli it is delicious!
One thing that we have been eating regularly for the last 3 weeks is Gwen’s Easy Bread. It really is so easy!!! It is fantastic fresh or used as a pizza crust. The longer it sits in the fridge, the sourer it gets. My family loves this bread and we have to control ourselves to not eat it all the time. I have actually thought about buying another glass container so I can have 2 batches going at one time. I have included a link to this recipe below so you can try it for yourself.
One last recipe I would like to share it a snack/dessert recipe my husband and I enjoy often. Our kids even like it and enjoy it when I make it for them for a snack. This one is from Briana Thomas and it is the Peanut Butter Chocolate Chip Cookie. This thing really is huge, and it is a single serve!! I have made it as a round cookie, but I also doubled the recipe, baked it in a loaf pan, then melted my chocolate chips and spread them on top like a frosting… YUM!!
