I had plans this week to make some breakfast burritos in bulk so that we would have quick, healthy breakfasts in the mornings. Well, when I did my online grocery order, I ordered the wrong size of tortillas, so I won’t be making them in bulk. I did decide though, that I would make them for dinner tonight.
Everyone here loves breakfast burritos. Especially if they have hashbrowns in them. Here is my recipe for quick, easy and delicious, large family breakfast burritos. Enjoy!
Large Family Style
- 2 bags frozen hash browns
- 2 lbs breakfast sausage
- 18 eggs
- 2 cups shredded cheese any kind will do
- 2 bags tortillas 8 count
- 1 jar salsa optional
- 1 tub sour cream optional
Brown the sausage
Add the hash browns to the cooked sausage and cook them. They don't have to be crunchy, but they do need to be cooked.
Scramble the eggs in a separate bowl. Then push the sausage and hash browns to one side of your pan. Pour in the eggs and cook them. When they are finished, mix all of it together.
Warm your tortillas, then put some cheese in the middle. Top with the sausage, hash brown and egg mixture. You can add some salsa and sour cream if desired.
Roll it up and enjoy!
